Chocolate Éclairs

Ingredients

  • 8 De Wafelbakkers Buttermilk pancakes
  • 3.4 ounce package French Vanilla instant pudding and pie filling mix
  • ¾ cup chocolate fudge ice cream topping or pour-on chocolate glaze
  • 4 maraschino cherries
  • ¾ cup sweetened whipped cream

Directions

This is a fan submitted recipe from Deborah Puette.

Pour pudding mix in a medium mixing bowl. Slowly add the milk while beating with an electric mixer on medium speed until completely mixed. Set aside for 5 minutes.

In a large griddle over medium heat, add the 8 pancake squares and heat 1 ½ minutes on each side.

Cut edges of pancakes off to form rectangles.

Place one pancake square on a serving plate. Top with one fourth of the pudding mixture. Top with 
another pancake piece. Spoon on one fourth of the chocolate.

Top with dollop of the whipped cream.

Add a cherry to the center of the whipped cream.

Repeat for the next three servings. Serve.
